Dehydrated flax / pumpkin / sunflower bread

April 2011: I have owned an Excalibur Dehydrator (Model #3526T - don't get a model without a timer - purchased at the manufacturer here in Sacramento, California) for several years but only now had the idea to make raw "bread" from flaxseed, pumpkinseed, and sunflower seeds. I have had such "bread" at raw food restaurants and potlucks - but was not sure how it was created. Then, when considering that these seeds are healthier to eat after soaking, I found some recipes, such as this one, and decided to try it:

  • Start with about 1/2 cup flax seeds, 1 cup pumpkin seeds, and 1/2 cup sunflower seeds (but I didn't measure and variations work fine)
  • Soak the seeds for about 12 hours then rinse (I soaked in filtered water but rinsed/sprayed with tap water)
  • Blend and grind in a food processor
  • Spread onto dehydrator sheets
  • Dry at 115 for about 3 hours
  • Flip it on to another dehydrator tray that has no sheet, and dry for another 3+ hours

The first batch I made was sweetened and added grated coconut and cacao. The second batch i wanted something that could be used for sandwiches, so i only added sea salt and some pepper.

The result is a very healthy and affordable bread substitute.

This is the first patch where I went crazy to make a sweet healthbar. But it was better with some honey added.

I used some to make a tomato/onion/ground mushroom sandwich! (My 100% raw friends my cringe at the factory mustard and mayo)
